Baby Kale Salad
Kale is one of the healthiest things you can eat, but it doesn’t always taste great raw. This version made with tender baby kale, chickpeas, fresh oranges, crunchy almonds, topped with a homemade salad dressing makes a satisfying and healthy lunch all on its own or a great addition to main dishes at your next family get-together!
Ingredients
- 1/2 a bag or container baby kale
- 1/2 can chickpeas, rinsed and drained
- 1 medium-small size orange, chopped in quarters
- 1/3 cup crunchy shaved almonds
- 1/3 cup cooked edemame
For the Dressing
- 1/4 cup Omega Nutrition 3.6.9 Oil
- 2 tablespoons organic soy sauce
- 1 tablespoon Omega Nutrition Apple Cider Vinegar or lemon juice
- 1 teaspoon sesame oil
- 1 teaspoon honey
Method
Dressing: Combine all of the ingredients in a jar with a tight-fitting lid. Screw the lid on the jar tightly and shake thoroughly. You get to choose how acidic you like your dressing to be. We recommend a ratio of 3:1 oil and vinegar.
To serve: Arrange all ingredinets to a platter or serving bowl and top with crunchy almond shaves, cooked edamame (for about 5-10 min in boiling water), and chickpeas. Drizzle with dressing.
