Arugula Salad
Let’s make this easy and quick salad with Omega Nutrition Flaxseed Oil. This flexible recipe goes with just about anything. It’s simple, tasty, endlessly customizable, and the Flaxseed Oil dressing makes it the best arugula salad you’ll ever make.
Ingredients
- 5 cups of arugula
- 1 cup roasted squash
- 1/3 cup pecans
- Sprinkle of Feta Cheese (you can add tofu or vegan cheese) to make it dairy free
- Omega Nutrition Avocado Oil or any vegetable oil
For the Flaxseed Dressing
- 2 tbsp freshly squeezed blood orange juice
- 1 tbsp Omega Nutrition Apple Cider Vinegar or Red Wine Vinegar
- 3 tbsp Omega Nutrition Hi-Lignan Flaxseed Oil
- 1/2 tbsp honey
- Salt + Pepper
Method
Roasted Squash: Preheat oven to 425 F (218 C). Arrange squash on a parchment-lined baking sheet. Sprinkle with Omega Nutrition Avocado Oil, salt, and pepper and toss to coat. Spread in an even layer. Roast squash for 15-20 minutes or until tender and golden brown.
Dressing: In the meantime, prepare dressing by adding all dressing ingredients to a bowl. Whisk together and set aside. You get to choose how acidic you like your dressing to be. We recommend a ratio of 3:1 oil and vinegar.
To serve: Arrange arugula to a platter or serving bowl and top with roasted squash, crunchy pecans, feta or vegan cheese. Drizzle with dressing.
