I started using Omega Nutrition coconut oil 36 years ago. I continue to use it because it is still the best available. I especially like that it does not have the coconut taste or scent. I can't comment on shelf-life because I have never bought a large enough container to notice any degradation in quality; it must be more than a year though. By the way, it would be nice to be able to buy 64 ounce (or larger) containers again; it's much more practical, and has got to produce less plastic (Omega Nutrition, please take note!). My wife uses it for baking, and also as a skin cream. Don't believe any of that rubbish about bad cholesterol; I have been using this coconut oil generously for over 36 years. I have my blood cholesterol, including LDL particle size, checked every six months; at 67 years old my physician tells me that my numbers are more properly associated with a man 20 years younger. This isn't necessarily causation, but it also does not indicate any hazard.
